Breakfast Burrito

A breakfast burrito is the perfect way to switch up your normal morning routine. Try this delectable recipe for something new!

Ingredients

  • 4 tsp Olive Oil
  • 1 cup Red Onion Diced
  • 1 Red Bell Pepper Diced
  • 1 cup Black Beans No salt added; Drained; Rinsed
  • Black Pepper Ground
  • 4 Whole Eggs
  • 4 Egg Whites
  • 1/3 cup Pepper Jack Cheese Shredded
  • 4 Whole Wheat Tortillas
  • 1/4 cup Greek Plain Yogurt
  • 1/4 cup Salsa
  • 1 Tomato Medium; Diced
  • 1 Avocado Cubed

Instructions

  1. Heat 2 tsp olive oil in a large nonstick frying pan over a medium high heat.

  2. Cook the onions and peppers until onions are softened and peppers are slightly charred, about 8 minutes.

  3. Add the black beans and cook until warmed through, another 3 minutes.

  4. Season and transfer to a dish.

  5. Whisk together the eggs and egg whites, then stir in the cheese.

  6. Heat the remaining 2 tsp olive oil in the frying pan and reheat the skillet over a medium heat. Reduce heat to low and add eggs, scrambling until cooked through, about 3 minutes.

  7. Spread each tortilla with 1 Tbsp each Greek yogurt and salsa, then layer with 1⁄4 of the black bean mixture, 1⁄4 of the scrambled eggs, some diced tomato, and 1⁄4 of the avocado.

  8. Roll up burrito style and serve.
