Coconut Milk Breakfast Quinoa

Start your morning with a bowl full of hearty, sweet, and simple ingredients. Serve with fruit and pistachios.

Ingredients

  • 1 Cup Quinoa Rinsed Well
  • 2 Cups Coconut Milk Canned
  • 1 Tsp Vanilla Extract
  • 1 Cup Fresh Fruit
  • Pistachios Chopped
  • Stevia If desired

Instructions

  1. Combine quinoa, coconut milk and vanilla in a small saucepan and bring to a boil.

  2. Reduce to a simmer, cover and let cook for 15 minutes until the quinoa can be fluffed with a fork.

  3. Divide quinoa into bowls and serve with fruit and pistachios.
