Seitan

Slice and use as a meat substitute in your favorite recipes.

Ingredients

  • 1 Cup Vital Wheat Gluten
  • 1/4 Cup Vegetable Broth
  • 2 Tbsp Orange Juice
  • 1 Tbsp Soy Sauce Low sodium
  • 6 Cups Vegetable Broth Low sodium
  • 2 Tbsp Soy Sauce
  • 1 Onion Rough cut
  • 1 Celery Stalk Rough cut
  • 1 Carrot Peeled; Rough cut
  • 3 Garlic Cloves Smashed
  • 1 Inch Piece of Ginger Peeled

Instructions

  1. In bowl, stir together vital wheat gluten, ¾ cup vegetable broth, 1 tablespoons soy sauce, and orange juice. It should firm up quickly. Using your hands, knead dough for 3-5 minutes.

  2. Separate dough into 4 pieces. Knead and stretch each piece out like you would to form pizza dough. Each piece should be about ½ inch thick.

  3. In large stock pot bring to a boil 6 cups vegetable stock and 2 tablespoons soy sauce. Add in onion, carrot, celery, garlic, ginger, and seitan pieces. Cover and simmer for 30 minutes. Open lid and, if any seitan pieces are above the liquid, flip pieces over so that the exposed part is now submerged. Return cover and continue simmering for another 30 minutes.

  4. Allow to cool. Slice and use as a meat substitute in your favorite recipes (stir fry, stroganoff, curry, etc.).

  5. Store in fridge or freezer.
