Add some texture and flavor to your veggie side dish.
- 1 Tbsp Olive Oil
- 2 Zucchini
- 1/2 Cup Parmesan Cheese Grated
- Salt and Pepper To taste
- Cut zucchini lengthwise into 1/2" strips.
- Heat oil in large sauté pan and cook zucchini until softened, about 15 minutes.
- Season with salt and pepper.
- Sprinkle Parmesan cheese over the zucchini and cover pan for 2-3 minutes until cheese has melted.
- Serve warm.
