Cool Avocado and Cucumber Soup

Cucumbers contain lariciresinol, pinoresinol, and secoisolariciresinola--these plant compounds are found to be great for your health. Avocado is also exceedingly good for you, with its healthy fats and high concentrations of carotenoids.

Takes . Serves 6.

Ingredients

  • 2 cups Water
  • 2 lbs Cucumber
  • 2 Avocados Ripe
  • 3 tbsp Lime Juice
  • 1 pinch Kosher Salt
  • 1 pinch Cayenne pepper
  • 1 tbsp Fresh Mint Chopped
  • 1 tbsp Fresh Cilantro Chopped

Instructions

  1. Pour 1 cup of water into blender.
  2. Add cucumbers, avocados, lime juice, salt and cayenne.
  3. Blend until smooth, gradually adding water until you reach the desired consistency.
  4. Chill for a least two hours.
  5. Stir in mint and cilantro just before serving.
