- 1 Cup Quinoa Rinsed Well
- 2 Cups Coconut Milk Canned
- 1 Tsp Vanilla Extract
- 1 Cup Fresh Fruit
- Pistachios Chopped
- Stevia If desired
Instructions

Combine quinoa, coconut milk and vanilla in a small saucepan and bring to a boil.

Reduce to a simmer, cover and let cook for 15 minutes until the quinoa can be fluffed with a fork.

Divide quinoa into bowls and serve with fruit and pistachios.
