Cool Avocado & Cucumber Soup
Simple, smooth, and refreshingly flavorful.
Cucumbers contain plant compounds lariciresinol, pinoresinol, and secoisolariciresinola, which are found to be great for your health. Avocado is also exceedingly beneficial with healthy fats and high concentrations of carotenoids.
- 2 cups Water
- 2 lbs Cucumber
- 2 Avocados Ripe
- 3 tbsp Lime Juice
- 1 pinch Kosher Salt
- 1 pinch Cayenne pepper
- 1 tbsp Fresh Mint Chopped
- 1 tbsp Fresh Cilantro Chopped
Pour 1 cup of water into blender.
Add cucumbers, avocados, lime juice, salt and cayenne.
Blend until smooth, gradually adding water until you reach the desired consistency.
Chill for a least two hours.
Stir in mint and cilantro just before serving.
