Orzo Spinach Salad

Delicious, light, spinach salad, excellent for any occasion.

Ingredients

  • 1/2 lb Orzo Pasta Whole wheat if available
  • 2 oz Crumbled Feta Cheese
  • 3 oz Baby Spinach Leaves 1/2 bag; Stems trimmed; Cut into 1⁄2 ribbons
  • 1 Red Bell Pepper Finely Chopped; Can use yellow/orange
  • 2 tbsp Olive Oil
  • 1/8 tsp Salt
  • 1/8 tsp Ground Black Pepper Or to taste

Instructions

  1. Prepare orzo pasta per package directions, drain, rinse and cool.

  2. While orzo is cooking, trim and cut baby spinach and seed and chop bell pepper.

  3. Add spinach, bell pepper and remaining ingredients, toss and chill 2 hours before serving.
