Panang Chicken Pineapple Curry Cream
A soft-textured dish that’s easy to eat, and high in protein.

Ingredients
- 2 Cups Chicken Broth Low sodium
- 1 Cup Coconut Milk
- 1 Cup Fresh Pineapple Diced
- 1 Cup Basmati Rice Cooked
- 1 Tsp Salt
- 2 Tbsp Curry Powder
- 1 Lb Chicken Breast Raw; Thin sliced
Instructions

Combine all ingredients in a soup pot.

Bring to a boil then simmer while stirring for 5 minutes.

Place in a blender and puree.
