Roasted Asparagus and Red Peppers
Asparagus and peppers combined for a light and decadent dish, full of nutritious and delicious ingredients.
- 1 Asparagus Bunch
- 1 Red Pepper
- 1 Garlic Clove Minced
- 1 tsp Fresh Rosemary Chopped
- 1 tsp Fresh Parsley Chopped
- 1 tbsp Olive Oil
- 1/4 tsp Black Pepper
- 6 tbso Parmesan Cheese Shredded
Cut asparagus to desired length (about 4-5 inches), removing tough bottoms.
Cut the tops and bottom off the red pepper and de-seed. Cut pepper into 8 even strips.
Season the peppers and asparagus with rest of ingredients and place on a sheet pan in a single layer.
Place in a preheated 450 degree oven for about ten minutes or until asparagus are cooked to desired temperature.
Remove vegetables to your serving vessel and serve.
Divide the bunch of asparagus into 4 servings about 7-9 pieces each. Add 1 1⁄2 tablespoons of parmesan per serving.
