Roasted Asparagus and Red Peppers

Asparagus and peppers combined for a light and decadent dish, full of nutritious and delicious ingredients.

  • 1 Asparagus Bunch
  • 1 Red Pepper
  • 1 Garlic Clove Minced
  • 1 tsp Fresh Rosemary Chopped
  • 1 tsp Fresh Parsley Chopped
  • 1 tbsp Olive Oil
  • 1/4 tsp Black Pepper
  • 6 tbso Parmesan Cheese Shredded


  1. Cut asparagus to desired length (about 4-5 inches), removing tough bottoms.

  2. Cut the tops and bottom off the red pepper and de-seed. Cut pepper into 8 even strips.

  3. Season the peppers and asparagus with rest of ingredients and place on a sheet pan in a single layer.

  4. Place in a preheated 450 degree oven for about ten minutes or until asparagus are cooked to desired temperature.

  5. Remove vegetables to your serving vessel and serve.

  6. Divide the bunch of asparagus into 4 servings about 7-9 pieces each. Add 1 1⁄2 tablespoons of parmesan per serving.
