Sicilian Bean & Red Pepper Salad

A hearty bean salad that can be made a day ahead of time. The lemon and parsley dressing brings all of these summer flavors together. This salad pairs well with grilled chicken pesto for a full meal.

Ingredients

  • 1/2 cup Black Beans Canned; No salt added
  • 1/2 cup Cannellini Beans Canned; No salt added
  • 1/2 cup Chickpeas Canned; No salt added
  • 1/2 cup Artichoke Heart Julienne
  • 4 tsp Parsley Chopped
  • 1 Lemon Juice
  • 1 Lemon Zest
  • 1/2 tsp Black Pepper
  • 1/4 cup Roasted Red Pepper Canned
  • 2 tbsp Olive Oil

Instructions

  1. Remove beans from can and rinse under cold water and drain in a colander.

  2. In a large bowl add all ingredients together and mix well.

  3. Refrigerate and hold for service.
