Asian Chicken Fajitas
Serve with flour tortillas, cheese, and guacamole.
- 8 Oz Chicken Breast Boneless; Cleaned of fat and grizzle
- 2 Tbsp Olive Oil
- 2 Garlic Cloves Minced
- 1 Onion Sliced
- 1 Green Pepper Sliced
- 1 Red Pepper Sliced
- 1 Tbsp Jalapeno Minced
- 1/2 Cup Dry Vermouth
- 2 Tbsp Hoisin Sauce
- 1 Tsp Chili Powder
- 1 Plum Tomato Cut into eights
Slice chicken breast into uniform pieces. Heat 1 tablespoon oil in sauté pan. Cook chicken until cooked through. Remove to a plate and keep warm.
Heat remaining oil and cook onions until beginning to soften, about 5 minutes.
Add in garlic, red pepper, green pepper, and jalapeno. Cook, stirring, for an additional 5 minutes.
Return chicken to pan, toss to combine. Add in vermouth and scrape bits of bottom of pan. Add in hoisin and chili powder stirring to combine.
Remove from heat. Toss in tomatoes. Serve with flour tortillas, cheese, and guacamole.
