Rico Griffone is a graduate of the Culinary Institute of America and has worked as a consultant for the Culinary Institute’s “Menu for Healthy Kids” Research Program. The program was designed to combat childhood obesity through school lunch reform. Chef Rico has been working with the CNC since its conception, providing a culinary perspective to the collection and interpretation of data. He also works with multiple JCC’s in Florida on a pilot program that brings nutrition education to the facility’s preschool programs as well as parent classes.
