Beef and Barley Soup
A high protein soup that will keep you full.

Ingredients
- 1 Tbsp Olive Oil
- 1 Lb Stew beef Diced
- 2 Qt Beef Broth Low sodium
- 1/2 Cup Pearl Barley Uncooked
- 1 Garlic Clove Minced
- 1 Onion Diced
- 1 Tbsp Molasses
- 4 Oz Mushrooms Chopped
- 1/4 Tbsp Fresh Parsley Chopped
- 1/2 Tsp Dried Thyme
- Salt and Pepper To taste
Instructions

Heat oil in large soup pot and cook off beef until no longer pink.

Add remaining ingredients. Bring to a boil. Cover and simmer for 45 minutes or until barley is tender.
