Braised Kale

An easy and hearty side dish that’s loaded with fiber! This recipe is quick, easy and pairs well with a variety of meals.

Substitute vegetable stock for a vegetarian version.

  • Serves: 4

Ingredients

  • 1 tbsp Olive Oil
  • 1 Onion Thinly sliced
  • 2 Garlic Cloves Sliced
  • 1 Kale Bunch Washed; Stem removed; Chopped
  • 1 1/2 cups Chicken Broth Low sodium
  • Salt To taste
  • Pepper To taste

Instructions

  1. Heat oil in large sauté pan.

  2. Add in onions and garlic. Cook until softened but not brown, about 5 minutes.

  3. Add kale and broth and bring to a boil.

  4. Cover and simmer for 20 minutes.

  5. Season with salt and pepper.
