A quick and easy side dish that really brings the flavor.
Substitute vegetable stock for a vegetarian version.
- 1 tbsp Olive Oil
- 1 Onion Thinly sliced
- 2 Garlic Cloves Sliced
- 1 Kale Bunch Washed; Stem removed; Chopped
- 1 1/2 cups Chicken Broth Low sodium
- Salt To taste
- Pepper To taste
Heat oil in large sauté pan.
Add in onions and garlic. Cook until softened but not brown, about 5 minutes.
Add kale and broth and bring to a boil.
Cover and simmer for 20 minutes.
Season with salt and pepper.
