Skillet Kale and Sausage
A flavorful and hearty meal.
- 10 Baby Potatoes Washed; Cut into quarters
- 2 Tbsp Olive Oil
- 1 Onion Diced
- 1 Smoked Sausage Sliced into 1/4″ rounds
- 1 Garlic Clove Minced
- 1 Kale Bunch Washed; Destemmed; Roughly cut
- 1 Cup Chicken Stock Low sodium
- 2 Tomatoes Diced
- Salt and Pepper To taste
Preheat oven to 325 degrees Fahrenheit.
In a bowl, combine 1 tablespoon olive oil with potatoes. Season with salt and pepper and toss to coat.
Place potatoes on a baking sheet and place in oven for 30 minutes until brown and tender.
Meanwhile, heat remaining tablespoon of oil in skillet. Add onion and sausage and cook until meat is seared and onions begin to soften, about 6 minutes.
Add in garlic, cook for 1 additional minute. Add in kale and toss until wilted. Stir in chicken stock, cover pan, and simmer for 20 minutes or until kale is tender. Continue to cook until most of the liquid is evaporated but not dry.
Add cooked potatoes and diced tomatoes to the skillet ,toss, and season with salt and pepper.
