- 1 Tbsp Olive Oil
- 1 Onion Sliced
- 1 Green Apple Peeled; Thinly sliced
- 1/2 Head Red Cabbage Sliced
- 1 Cup Chicken Broth Low sodium
- 1/4 Cup Red Wine Vinegar
- 1 Tbsp Sugar
- 1 Bay Leaf
- 1 Cinnamon Stick
- Salt and Pepper To taste
Heat oil in a large sauté pan. Cook onion and apple until soften, about 5 minutes.
Add remaining ingredients and bring to a boil.
Cover and simmer over medium-low heat for 30 minutes.
Discard the bay leaf and cinnamon stick before serving.
